Cooking favorite foods for you and your family can certainly be a part of a healthy lifestyle. With a few modifications your comfort food can become clean eating!

This Months Recipe Makeover 

LOW FAT/LOW CARB MEATLOAF

2 Lbs Ground Sirloin Beef
2 Eggs(May Omit The Yolks)
1 Red Bell Pepper, Chopped 
1 Large Onion, Chopped
1 Med. Zucchini, Grated
2 Large Carrots, Grated
1 Cup Chopped Fresh Mushrooms
1/4 Cup Grated Romano Cheese
4 Cloves Fresh Chopped Garlic
1/2 Cup Minced Fresh Herbs (Parsley, Marjoram, Thyme)
2 Large Yukon Gold Potatoes, Peeled Parboiled And Grated
1 Cup Fat-Free Beef Broth
1 Can Low-Fat Marinara Sauce
1 Tbsp. Extra Virgin Olive Oil (Optional)
6 Large Leaves Fresh Basil
1/2 Cup Good Dry Red Wine

Sauté bell peppers, onions and garlic. Add 1 cup of cold broth. Set aside. In a large bowl, add ground beef, chopped mushrooms, grated vegetables, eggs, herbs and cheese. Then add sautéed vegetables and broth. Mix with your hands until everything is combined. Add grated potatoes and combine. 

Divide this mixture in four. Spray 2 9x14 pans w/ non-stick cooking spray. Shape the 4 equal portions into loaves and place 2 loaves in each pan. Bake at 400° F for 30 minutes.

This Step is Optional
Open a can of Trader Joe's Low fat marinara Sauce. Place in a sauce pan. Add 1/2 cup of good dry red wine, 6 basil leaves, and 1 tablespoon of extra virgin olive oil. Simmer until meat loaf is done. Serve sauce over the top of the meatloaf. This recipe makes 4 Meatloaves which equals 16 servings. Freeze what you cannot use within a week.
